I made two types of empanadas today—onion and apple smoked Gouda, and lentil and sweet potato. The recipe called for sautéed onions but I wanted to step it up and attempt something closer to caramelized onions. I probably should have given it another hour but I was short on time. I’ve never made caramelized onions before so I’d like to attempt again when I can fully commit. What do you think 😋
